Japanese-style savory pancakes

Okonomi – literally translates as ‘your choice’ and okonomi-yaki is a popular Japanese savory pancake eaten as one-course lunch, snack or light evening meal. They are normally made of finely shredded cabbage mixed with batter and a small amount of toppings like strips of bacon, prawns etc – your choice as the name suggests. This recipe is an adaptation, using courgettes instead of cabbage leaves.

Japanese-style savory pancakes



  1. Start by preparing the batter by mixing all the ingredients together in a large bowl with an egg whisk and mix well to get a smooth runny yogurt consistency. Ideally let the batter mix rest for 30 to 60 minutes so to develop elasticity.
  2. With a Japanese mandolin or a cheese grater shred the courgettes into the batter bowl, add the salt to taste and mix well.
  3. Heat a non-stick frying pan with the cooking oil over high heat. Using a large spoon, add a half of the courgette batter mix and flatten it with the back of the spoon and add the rest on top – adding it in twice helps to make the pancake airy and light. Reduce the heat to medium and if you are adding any toppings lay them on the top and cook for 3 ~ 4 minutes to seal the bottom side.
  4. With two large spatulas turn over the pancake and cook for further 3 ~ 5 minutes and turn it over again for the third time (showing the toppings) and serve.

  5. You may serve it as a whole or cut it into 4 wedges and drizzle with a sauce of your choice such as soy sauce or Balsamic vinegar and garnish with a sprig of green like parsley, chopped spring onion or cress.
